End of Summer Watermelon, Lime, Basil, Gin Slushie!

What do you do when watermelon season is over but you love watermelon, so you keep buying watermelons and they keep turning out to be overripe, unripe or just wrong?! The answer? Juice that big sucker, and turn it into a delicious cocktail!

Watermelon is one of the things that makes me believe in a higher power! When they’re good, they’re so good. But when they’re bad.....UGH, what a disappointment. But never fear, just think of that old saying, “when life gives you lemons, make lemonade”, however in this case, when the end of summer gives you a crappy watermelon, make it into a delicious slushie!

This recipe is super easy and an excellent excuse for a ladies night in!

RECIPE:
One whole watermelon juiced

Two peeled limes, juiced (leave some peel on if your juicer can handle it)

One handful of basil, juiced

Gin

One can of sparkling Rosé, Or one bottle of dry spicy ginger beer

DIRECTIONS: Pour watermelon, lime and basil juices into a large flat tupperware container. Then pour in Gin to taste!  I shoot for 1/4 to 1/3  ratio of gin to juices. (Don’t hold back because there will be more liquid poured in later.) Put lid on and stick in the freezer for at least 12 hours. This can be made up to a week in advance of a party.

When ready to serve, take out of freezer and pour in one chilled can of sparkling Rosé, or if you want to slow your roll, a can of dry spicy ginger beer.  Scoop into your favorite glass, garnish with a lime or lemon wedge and a sprig of basil. Voila, end of summer deliciousness, in a glass!
